2 slices whole grain bread
1 ripe avocado
1 large egg
1 teaspoon olive oil
1 pinch salt
1 pinch black pepper
Optional: Red pepper flakes or Everything Bagel Seasoning
Instructions
Toast the bread slices until golden brown and crisp.
While the bread toasts, heat the olive oil in a small non-stick skillet over medium heat.
Crack the egg into the skillet and cook until the white is set and the yolk reaches your preferred doneness (runny or firm). Season with salt and pepper.
Peel and mash the avocado in a small bowl. Add salt and pepper to taste.
Spread the mashed avocado evenly over the two slices of toast.
Carefully place one cooked egg on top of each avocado-covered toast slice.
Sprinkle with red pepper flakes or Everything Bagel Seasoning, if using. Serve immediately.
