  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • Vegetable oil, for frying
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the diced apples.
  5. Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 375°F (190°C).
  6. Carefully drop rounded tablespoons of the batter into the hot oil, being careful not to overcrowd the pot.
  7. Fry for 2-3 minutes per side, until golden brown and cooked through.
  8. Remove fritters with a slotted spoon and place them on a wire rack set over paper towels to drain.
  9. While the fritters are still warm, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach desired consistency.
  10. Dip the warm fritters into the glaze or drizzle it over them.
  11. Let the glaze set before serving.
