Bake this easy apple fritter bread for a moist, tender loaf filled with cinnamon-spiced apples and topped with a sweet glaze. It is perfect for breakfast, a snack, or dessert.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 medium apples, peeled, cored, and chopped
  • 1/2 cup packed brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 1/4 cup water (for swirl)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  4. Prepare the apple filling: Toss the chopped apples with the brown sugar, cinnamon, and water until the apples are coated.
  5. Gently fold half of the apple mixture into the batter. Pour half the batter into the prepared loaf pan. Sprinkle the remaining apple mixture over the batter. Top with the remaining batter.
  6. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent it with foil.
  7. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. Prepare the glaze: Whisk together the powdered sugar and milk until smooth. Drizzle the glaze over the cooled bread before slicing and serving.

Notes

  • For the moistest bread, use apples like Granny Smith or Honeycrisp.
  • If you are busy with meal planning, this bread freezes well once cooled and before glazing.
