Portable baked oatmeal cups packed with apples and warm spices, perfect for meal prep and freezer storage.

Ingredients

  • 2 cups rolled oats
  • 1 cup diced apples
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup maple syrup
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. Mix oats, apples, cinnamon, and nutmeg in a bowl.
  3. In another bowl, whisk maple syrup, milk, egg, vanilla, and baking powder.
  4. Combine wet and dry ingredients.
  5. Spoon mixture into muffin cups.
  6. Bake for 25 minutes or until set.
